Banana and Peanut Butter Gluten Free Pancakes

Ingredients

Makes 6 Pancakes

4 tablespoons of Gluten Free Flour (we use Dove’s Farm Plain GF)

150ml almond/soya or GF oat milk

1 tablespoon Smooth Peanut Butter

1-2 Ripe Bananas (to add natural sweetness)

Organic Virgin Olive oil OR Organic Rapeseed oil for frying

Method

Pop all the ingredients into a blender jug and blend well.

Add a teaspoon of oil to a 10 to 12 cm non-stick frying pan, heat through

Once the oil is hot, add 15 to 20 ml of the mix to the pan and spread the mix until it covers the base of the pan

Cook one side for 1 to two minutes (until you can safely flip the pancake)

Flip the pancake and cook for a further 1 to 2 minutes

Remove and place on a plate, repeat until all the mixture if finished.

Good to eat as they are or add a drizzle of organic Maple syrup, or peanut butter, choc spread, nuts, fruits… we topped ours with vegan bacon, so whatever takes your fancy.
